Specialising in food and drink from Extremadura, this bohemian tavern is a great place to sample one of Spain's most underrated cuisines. Try migas, a savoury bread-stuffing packed with spices and bits of pork, or tasajo adobado, thick pieces of cured ham with a slightly spicy bite served drizzled in olive oil. There is also a nice selection of cheeses (the oveja is heavenly) and cured meats. Liquid assets include a dozen regional wines. The Pitarra (a homemade wine from owner Victor's village) is really tasty. Or top it all off with one of over thirty liqueurs. While you do, tap your toes to some of the better music playing on the street, a great mix of latino fusion with a little Tom Waits thrown in. Victor and staff have managed to infuse this place with that indefinable hip element that so many places long for. You've either got it or you haven't. Conspiradores definitely has.
